 The proper functioning of the immune system is the basis to good health and longivity. Anthocyanins play and essential part in keeping the immune system healthy. In general they scavenge free radicals from the system, allowing it to function properly.

Of the many the anthocyanins studied to day, the hull of certain varieties of black soybeans have the larger amount of the positive anthocyanins.

**As of 2003 more than 400 anthocyanins had been reported while more recent literature (early 2006), puts the number at more than 550 different anthocyanins.

The Soybornne Institute of Bothell, WA is currently involved in the study and development of a dry form of Black Soybean Anthocyanins. The study will determine amounts to which this

dry anthocyanin could be added, as well as, dry anthocyanin could be added, as well as,which food and drink items could be candidates, based on consumer acceptance. Health benefits and product improvement are the principal goals of the study.

Where to find anthocyanins. Plants rich in anthocyanins are Vaccinum species, such as blueberry, cranhberry and bilberry, black raspbrry, blackberry, black current, chokeberry, cherry egg plant, black rice, purple grape, red wine, red cabbage and biolet petals. The highest recorded amount appears to br specifically in the seed coat of black soybeans (Glycine max L. Merr.) containing some 2,000 mg per 100g.
